百合谷The purpose of my field trip is to research the Hong Kong ice room. Ice room also known as the ice hall which is a popular eating place in the 1950s and 1960s and mainly selling cold drinks, ice cream and sand ice and other frozen food place,it is considered the predecessor of the tea restaurant in Hong Kong [1] [2]. In the past, because the ice room only holds a snack license, in addition to selling drinks, can only sell sandwiches, pastries and can not supply real-time production food such as fried rice, side dishes and other cooked food. There are a lot of ice room has been changed and changed the restaurant license for the tea restaurant[6], so the mode of operation and supply of food and tea is no different [3]. “Ice room” name from the origin of two kinds of argument, the first argument is becausmapmape the building in Hong Kong early high, ceiling ceiling fan can be installed cool, and the sale of food and red beans, coffee, milk tea Western-based drinks to “drink ice” as a selling point, so named “ice room” [4]. Another argument is that Liang Qichao has a fellow with his study “drink ice room” in the name of business restaurants, its name to become “ice room” [5]. In this field trip interviewed some guests and employees found that the origin of the actual ice room may be closer to the first argument. The project to research is the Hong Kong ice room, mainly to study the current operation of the ice room and the reasons for the change.

There are six places i had went to, Wang Jiao, Tong Luo Wan, Tai Zi, Yuen Long, Xi Huan and Sheung Shui. Visiting more than ten Hong Kong ice room, in order to save time I take the nearest principle, if the distance is same i would choose one of the more famous to go. Wang Jiao has the most ice room. I guess maybe related to its convenient transportation.
There have been five Hong Kong ice rooms that in Wang Jiao and I will introduce them briefly. The first is Jinhua ice room, The waiter film aging, generally more than 40 years old. And basically no one of them could speak Mandarin, it is difficult to communicate with them. Inside the decoration is relatively simple, there is the taste like the old Hong Kong. But in addition to selling snacks, drinks also sell other fried rice, cooking dishes, fried noodles. I went to the shop’s time is 5:20 pm, many people were noisy, the store’s guests about 40 percent were young, 35 percent were middle-aged, twenty-five percent were old, The proportion of the family is 30 percent. I ordered the famous red bean ice and pineapple bag, red bean ice with a high lotus flower cup filled with red bean powder incense, ice crushed cold mixed red beans is very delicious. Checkout interviewed a relatively young clerk, found that this is a 30 years old shop, and received a lot of awards, such as Hong Kong’s top ten restaurants. But more details of the staff also do not know, such as the origin of the ice room and the store history. The second is the Taizi ice room. in fact, the ice room between Wang Jiao and Tai Zi, it can also said live in Tai zI. the decoration inside is more upscale and eighty percent were young people. Operating mode almost like ordinary tea restaurant , but also retained the representative of the ice room- red bean ice, pineapple bag and so on. Inside the staff, managers do not accept the interview and the reason is too busy to have time. The third is the giant ice room. The decoration of the shop is good, the walls and windows layout some interesting things. But in addition to the characteristics of the previous ice room, it also began to sell rice. 40% of the guests inside were old, most of them were reading the newspaper and relatively quiet. The fourth is the Huaxing ice room, this ice room have many branch store, because i was in Wang Jiao so go directly to the shop in Wang Jiao. At about eight o’clock the store guests packed, the boss is busy only answered a few simple questions, but allowed to take pictures. Store the model is relatively small, the wall has a lot of Chinese stars photo, such as Peng Yu Yan. This is a 11-year old shop, this store has the characteristics of Hong Kong before the ice room, only to sell drinks and snacks, do not sell cooking dishes. When went out i saw the price of drinks and snacks is cheaper. The last one is the queen ice room. The boss knows how to pack it, decorate of the restaurant with nostalgia and tide in one room, decorated with old records, toys, metal chandeliers. Restaurant food selection like Café form, there are Italian powder, egg bag, steak, etc., inside the chef was a five-star hotel’s Western kitchen. The boss is not there and the employee is not interviewed.

The second place is Tong luo Wan which went three ice rooms. The first is the Xi Xi ice room, which is the first ice room I started to explore by myself. But the impression to me is poor, it is not a good start. The waiter attitude is poor and do not accept the interview and is not allowed to take pictures, originally I intend to wait outside the opportunity to look into the inspection, but the staff came out to let me away. Looked at the door for a few minutes found that the store staff are mostly young people,there are a lot of guest to eat here and running similar to the tea restaurant. The second is the southern dragon room. I went to the time was about2:50 pm, the store’ sixty percent guests is young, twenty percent is the elderly, twenty percent is the family. I interviewed a pile of small couples in the store, they choose this stores’ reasons is that the store is more convenient, but they think this store is more common, health in general, the taste is like the old Hong Kong. Eating here more compact about half an hour there are many guests in here. I ordered a meal taste general. I interviewed the staff, one of the staff said most of the ice room has the second floor. It was not accurate answer from more than ten ice rooms i have visited in my two days. Ice room with the second floor is uncertain ,in fact there is no relationship. The third is the sky room. I went to the time around 3:20 pm. Inside the guests are very many and stores do not accept the interview, I simply took a few photos to leave. Store decoration with the operating model with the restaurant almost.

The third place is Yuen Long. Visiting a total of two stores, two are Hua Sao ice room, one of which is a form of take-away restaurant. That Huashu ice room only accept take-away, online or phone point orders and the whole store half of is the kitchen. I interviewed the staff, only one could speak Mandarin, replied that the last century, they called the ice room because the ice is very rare and expensive. So can provide ice restaurant very less, after long and long time directly named the ice room, mainly selling red bean ice, pineapple ice and other drinks. Comparison of information found on the Internet this argument is more reliable. The other position is very partial, but very many people go, there are no seats i went to that day. The restaurant is semi-open and the store has 7 creative dessert with 2 special drinks.

The fourth place is Tai Zi, just next to Waang Jiao.There only went to Yongxing ice room. This is a old shop here for 11 years and the operating mode is like the tea restaurant. I ordered a cup of tea with a pineapple. Pineapple package or a long time delicious, but the milk tea is not used to the mainland i have drink, it was bitter. 80% of the guests in the store are young people.

The fifth place is Sheung Shui, the inspection of a shop is Guangcheng ice room. High floor, old ceiling fan, white tiles, old deck, I went to the day is a holiday, there are several foreigners, many people have to wait. Food choices are few. But this ice room is very famous, I was found online and then go directly to the Hong Kong was named one of the top ten ice room, red bean ice is the masterpiece. I ordered a cup of good food.
The sixth place is the west side of the golden ice room. The store has several decades of history, but last year for the boss to reopen. The interior decoration style is retro style, quiet and quiet environment, the boss is very good to take pictures and interviews. The original operation of the ice room does not go, for the boss bought the sign, but the operating mode has changed, not only to sell drinks and snacks, and now also sell meals with rice noodles.

In fact, the original choice of ten locations, but the time of the field study more tense, some places are relatively remote, but in the past. So there is now left to leave a place. The choice of location to take into account the time, traffic and visibility. Decided to study the subject when the Internet has been looking for some of the information, using of Google, Baidu and other sites directly search the Hong Kong ice room, the site will give several recommended relatively high places,there are more distinctive shop, and then according to their own time , Traffic screening out the most suitable for our own routes. In Wang Jiao inspection when there are two or three ice room are met on the road, not in the original plan, probably because of traffic convenience in WangJiao.

To sum up, I went to the 12 ice room only one ice room to retain the basic operation of the old Hong Kong ice room model, only sell drinks and snacks, the other eleven ice rooms have been selling meal with rice. The location of the ice room is not the same as the age of the guests in the store, the coffee room is almost the same as the young people, they choose to eat in the ice room because the price is cheaper, more convenient and also has the old Hong Kong taste. Through interviewed with employees and guests found that the previous operation mode of the ice room is now difficult to survive, it could not meet the needs of young peoples’ diverse choice, so most of the ice room to adapt to changes in the times to make some changes. But in my opinion, it should be kept one or two with the original old Hong Kong ice room operating mode and decoration style of the ice room, it could used to remember the changes and changes in life, I think this is a very meaningful thing.
